Ingredients
These gluten-free chicken meatballs need just a few simple ingredients!
Ground chicken
I used a lean ground chicken for these healthy chicken meatballs. You can even make your own ground chicken by pulsing chicken breasts and/or chicken thighs in the food processor (affiliate link). You can also use ground turkey for this recipe!
Gluten-free breadcrumbs
Gluten free bread crumbs are pretty widely available in most grocery stores, but if you cannot find them in yours, simply toast 2 pieces of your favorite gluten free bread, tear into pieces, and place in the food processor (affiliate link). Puree until crumbly.
Dried spices
To flavor this chicken meatball recipe, we are using dried oregano, dried parsley, garlic powder, onion powder, salt, and pepper.
See the recipe card below for a full list of ingredients and measurements.
Instructions
To make this easy meatball recipe, first add meatball ingredients in a large mixing bowl. Gently mash together the ingredients with your hands until well combined, about 15 times.
Line a baking sheet with parchment paper. Use a 2 tablespoon-size cookie scoop up the meatball mixture.
Next, use your hands to roll each scoop into smooth balls.
Place meatballs in a hot skillet in a single layer about 2 inches apart. Cook until completely cooked through, turning every 2-3 minutes. The meatballs should be evenly browned and reach an internal temperature of 165°F.
Repeat with remaining meatballs, and work in batches if necessary.
