    Watermelon juice, muddled lime wedges and fresh mint. Fresh ingredients and gin add a spin to the classic cocktail. This Watermelon Gin Mojito is the perfect refreshing cocktail.

    Homemade watermelon juice, gin, lime, topped with bubbly club soda. While the classic mojito recipe uses rum, this mojito swaps for gin. 

    You will particularly enjoy this drink if you go for the lighter, herbaceous cocktails.     This cocktail is in honor of my dad. He drinks watermelon juice every single day and is a huge lover of mojitos. I decided what could be a better combination than combining the two?! Now I will admit he prefers a rum-based mojito, but that’s another story!

    Ingredients & Substitutions

    • Gin. Substitute for rum, vodka or tequila.
    • Fresh Watermelon Juice. Use fresh watermelon in this mojito gin recipe. Substitute for store bought watermelon juice, or your favorite fruit juice.
    • Limes. Muddle fresh lime wedges to create lime juice. Substitute for lemon.
    • Fresh Mint.
    • Sugar. The preference is granulated sugar to have that infamous crunch that a traditional mojito has. Substitute for honey, agave syrup, or simple syrup.
    • Club Soda. Top off a mojito with a sparkling light mixer like club soda. Substitute for mineral water, flavored sparkling water, soda water, or tonic water.

    TIP! Making your own watermelon juice is really easy! Simply blend cubed watermelon until smooth and then strain.

    Step-By-Step Instructions

    STEP ONE: Make the fresh watermelon juice (or skip if pre-purchased). Do this by blending cubed watermelon and then strain it.

    STEP TWO: Muddle the lime wedge and mint leaves in a highball glass.

    STEP THREE: Add granulated sugar and remaining lime and mint. Muddle again. 

    STEP FOUR: Add gin and watermelon juice. Stir, and add ice.

    STEP FIVE: Top with club soda or sparkling mineral water.

    Variations

    Want to make a variation of this mojito cocktail?

    • Fresh fruit: Add fresh strawberries, blueberries, or cucumber.
    • Use crushed ice instead of ice cubes to step it up a notch.
    • Spirit: Try vodka, white rum, cuban rum, or tequila.

    Equipment Needed

    Muddler:

    • Budget Friendly: Use the bottom of a clean cooking spoon! 
    • Convenience Friendly: Buy a small muddler in either wood or steel.

    Highball Glasses:

    Highball glasses are taller and hold more in them. Use highball glasses for drinks that are topped with non-alcoholic mixers like soda or ginger beer. These are from Target!

    Blender and Strainer:

    To make homemade watermelon juice, you need to blend and strain fresh watermelon.

    I highly suggest drinking a mojito with a straw so that you can taste the sugar crunch.

    Do I need to use a cocktail shaker for a mojito?

    Nope! You can simply add the ingredients to a highball glass.

    Ingredients
      

    Fresh Watermelon Juice (makes 2 cups juice)

    • 4 Cups Watermelon

    Gin Mojito

    • 1.5 OZ Gin
    • 4 OZ Fresh Watermelon Juice* ingredients above
    • 4 OZ Club Soda
    • 2 Lime Wedges
    • 4 Mint Leaves
    • 1 TBSP Granulated Sugar

    Instructions
     

    Fresh Watermelon Juice

    • Add cubed watermelon to blender. Blend until smooth.
    • Strain watermelon juice into a measuring cup or pitcher. Make sure to press on the pulp to get extra watermelon juice. Discard any remaining pulp.
    • Keep to the side. Keep leftover watermelon juice in the fridge.

    Gin Mojito

    • Cut the lime into four wedges.
    • Add two lime wedges into a tall glass.
    • Muddle gently to release the lime juice.
    • Add the sugar and mint leaves to the glass.
    • Gently muddle again to release the juices of the limes and mint.
    • Add the fresh watermelon juice.
    • Add ice and half of the club soda and stir.
    • Pour remaining club soda.
    • Best to enjoy with a straw!

    Notes

    NOTE: Wash limes and mint leaves thoroughly. Mint can sometimes have an unattractively strong taste and is best when washed with soap.
    Gin. Substitute for rum, vodka or tequila.
    Fresh Watermelon Juice. Use fresh watermelon in this mojito gin recipe. Substitute for store bought watermelon juice, or your favorite fruit juice.
    Limes. Muddle fresh lime wedges to create lime juice. Substitute for lemon.
    Fresh Mint. Substitute for your favorite herb, like rosemary, basil or thyme.
