This cocktail is in honor of my dad. He drinks watermelon juice every single day and is a huge lover of mojitos. I decided what could be a better combination than combining the two?! Now I will admit he prefers a rum-based mojito, but that’s another story!

- Sugar. The preference is granulated sugar to have that infamous crunch that a traditional mojito has. Substitute for honey, agave syrup, or simple syrup.
- Club Soda. Top off a mojito with a sparkling light mixer like club soda. Substitute for mineral water, flavored sparkling water, soda water, or tonic water.
TIP! Making your own watermelon juice is really easy! Simply blend cubed watermelon until smooth and then strain.
Step-By-Step Instructions
STEP ONE: Make the fresh watermelon juice (or skip if pre-purchased). Do this by blending cubed watermelon and then strain it.
STEP TWO: Muddle the lime wedge and mint leaves in a highball glass.
STEP THREE: Add granulated sugar and remaining lime and mint. Muddle again.
STEP FOUR: Add gin and watermelon juice. Stir, and add ice.
STEP FIVE: Top with club soda or sparkling mineral water.

Fresh Watermelon Juice (makes 2 cups juice)
- 4 Cups Watermelon
Gin Mojito
- 1.5 OZ Gin
- 4 OZ Fresh Watermelon Juice* ingredients above
- 4 OZ Club Soda
- 2 Lime Wedges
- 4 Mint Leaves
- 1 tablespoon Granulated Sugar
Instructions
Fresh Watermelon Juice
- Add cubed watermelon to blender. Blend until smooth.
- Strain watermelon juice into a measuring cup or pitcher. Make sure to press on the pulp to get extra watermelon juice. Discard any remaining pulp.
- Keep to the side. Keep leftover watermelon juice in the fridge.
Gin Mojito
- Cut the lime into four wedges.
- Add two lime wedges into a tall glass.
- Muddle gently to release the lime juice.
- Add the sugar and mint leaves to the glass.
- Gently muddle again to release the juices of the limes and mint.
- Add the fresh watermelon juice.
- Add ice and half of the club soda and stir.
- Pour remaining club soda.
- Best to enjoy with a straw!
