    Fajita Veggies (Chipotle Copycat)

    Delicious sautéed peppers and onions seasoned with the perfect blend of spices so you can have Chipotle copycat burritos, fajitas, and tacos at home!

    These delicious fajita veggies taste just like the ones at Chipotle Mexican grill! You can use these veggies in a variety of dishes to recreate your favorites at home.

    Pair pulled chicken or pork carnitas with Mexican rice, and top it with colorful vegetables, easy guacamole, and serrano salsa verde for the perfect Chipotle inspired meal at home!

    Ingredients

    Ingredients to make chipotle style fajita veggies.

    Avocado oil

    We will be cooking these fajita veggies at high heat, so it's best to use a cooking oil with a high smoke point, like avocado oil or grapeseed oil. 

    Peppers

    Chipotle uses green bell peppers, but you can use a variety of colors of sweet peppers for this recipe. You can even throw in a spicy pepper if you want to add some heat! A poblano pepper will add some extra spiciness to your fajita veggies. I went with green peppers, red pepper, and yellow bell peppers, but you can swap for an orange one too. 

    Onion

    I call for a yellow onion, but you can also substitute for white onions or red onion. 

    Seasonings

    For the perfect fajita veggies, season them with a mix of chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. You can also add Mexican oregano. If you want to add some heat, throw in a pinch of cayenne pepper. 

    Fresh lime juice

    Finishing off the fajita veggies with a hint of acid balances out the flavors.

    How to make Chipotle fajita veggies

    Let’s make these homemade fajita veggies!

    Heat oil in a large cast iron skillet (affiliate link) over medium high heat. Add sliced bell pepper to the hot oil, and cook for 2-3 minutes, stirring often, until they begin to soften slightly.

    Add onions and seasonings.

    Next add onion, ground cumin, ground chili powder, salt, pepper, smoked paprika, garlic powder, and onion powder to the sautéed peppers. Stir well to coat all the peppers and onions.

    Stir and cook down.

    Finish with a squeeze of lime.

    Reduce heat to medium, and cook, stirring occasionally, for 8-10 minutes, or until the vegetables are cooked through. Add lime juice and cook for another 2-3 minutes. Remove from the heat, and set aside to cool slightly. 

    Enjoy as a side dish, in traditional fajitas, or delicious Fajita Tacos!

    • Use a cast-iron skillet to get a great sear on the veggies. 
    • These reheat well, so make some extra for meal prep!
    • How to store: Store leftovers in an airtight container in the refrigerator for 3-4 days. 

    Serving Suggestions 

    You can use these Chipotle copycat fajita veggies for so many other delicious dishes! Here are some ideas for serving. 

    • Pick a protein! Use Easy Shredded Chicken or Dutch Oven Carnitas. 
    • Add Mexican Rice and black beans. 
    • Choose your favorite toppings. Add Spicy Serrano Salsa Verde, Mango Habanero Salsa, Easy 4 Ingredient Guacamole, sour cream, and shredded cheese. 
    • Get saucy. Drizzle a delicious sauce over the top like Avocado Lime Sauce, Green Enchilada Sauce, or Cilantro Garlic Sauce. 
    • Serve it with a side of Healthy Mexican Street Corn and Corn Tortilla Chips!

    What are the veggies at Chipotle?

    Chipotle uses green peppers and onions in their fajita veggies. I added other color bell peppers to make them more colorful and flavorful. 

    Are Chipotle fajita veggies spicy?

    No, their fajitas are not spicy. If you want to make this recipe spicy, you can add a poblano pepper or season it with cayenne pepper.
