Fajita Veggies (Chipotle Copycat)

Delicious sautéed peppers and onions seasoned with the perfect blend of spices so you can have Chipotle copycat burritos, fajitas, and tacos at home!

Ingredients

  • 1 tablespoon avocado oil or other high heat neutral oil
  • 1 medium yellow pepper seeds removed and thinly sliced
  • 1 medium green pepper seeds removed and thinly sliced
  • 1 medium red pepper seeds removed and thinly sliced
  • ½ large yellow onion thinly sliced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon ground chili powder
  • 1 teaspoon coarse Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons lime juice

Instructions

  • Heat oil in a large skillet over medium-high heat. Add peppers, and cook for 2-3 minutes, stirring often, until they begin to soften slightly. Add onion, ground cumin, ground chili powder, salt, pepper, smoked paprika, garlic powder, and onion powder. Stir well to coat all the peppers and onions.
  • Reduce heat to medium, and cook, stirring occasionally, for 8-10 minutes, or until the vegetables are cooked through. Add lime juice and cook for another 2-3 minutes. Remove from the heat, and set aside to cool slightly.
  • Enjoy as a side dish, in traditional fajitas, or these delicious Fajita Tacos!

Notes

  • Use a cast-iron skillet to get a great sear on the veggies.
  • These reheat well, so make some extra for meal prep!
  • How to store: Store leftovers in an airtight container in the refrigerator for 3-4 days.
