Ingredients
Avocado oil
We will be cooking these fajita veggies at high heat, so it's best to use a cooking oil with a high smoke point, like avocado oil or grapeseed oil.
Peppers
Chipotle uses green bell peppers, but you can use a variety of colors of sweet peppers for this recipe. You can even throw in a spicy pepper if you want to add some heat! A poblano pepper will add some extra spiciness to your fajita veggies. I went with green peppers, red pepper, and yellow bell peppers, but you can swap for an orange one too.
Onion
I call for a yellow onion, but you can also substitute for white onions or red onion.
Seasonings
For the perfect fajita veggies, season them with a mix of chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. You can also add Mexican oregano. If you want to add some heat, throw in a pinch of cayenne pepper.
Fresh lime juice
Finishing off the fajita veggies with a hint of acid balances out the flavors.

How to make Chipotle fajita veggies
Let’s make these homemade fajita veggies!
Heat oil in a large cast iron skillet (affiliate link) over medium high heat. Add sliced bell pepper to the hot oil, and cook for 2-3 minutes, stirring often, until they begin to soften slightly.
Next add onion, ground cumin, ground chili powder, salt, pepper, smoked paprika, garlic powder, and onion powder to the sautéed peppers. Stir well to coat all the peppers and onions.
Reduce heat to medium, and cook, stirring occasionally, for 8-10 minutes, or until the vegetables are cooked through. Add lime juice and cook for another 2-3 minutes. Remove from the heat, and set aside to cool slightly.
Enjoy as a side dish, in traditional fajitas, or delicious Fajita Tacos!
