I’ve been experimenting with vegan lunches lately. This chickpea sandwich is entirely vegan, filled with all of my favorite veggies!
While I am a huge fan of a sandwich, this chickpea mixture can easily be made into a tortilla wrap or even a lettuce wrap. The mixture was flavorful, crunchy, and filling – the makings of a great lunch. The chickpea sandwich was so quick – it took me only minutes to pull together and was delicious. I had leftovers for days! The best part is that I made it on Sunday and enjoyed it all the way until Friday.
Ingredients
15 Oz. Can of Chickpeas
6 Slices Bread (choose based on your preference, I used sourdough)
1 Red Bell Pepper (diced)
2 Carrots (grated)
1 Bunch Dill
1 Bunch Scallion
Mustard (at least 2 Tbsp.)
Butter Lettuce
Instructions
- Dice the red bell pepper and grate the carrots. Finely chop the dill and the white and green parts of the scallion.
- Add the chickpeas, red bell pepper, carrots, dill and scallion into a large bowl. I first added 2 Tbsp. of mustard and added more until the ingredients were sticking together. I love mustard so I definitely added about ½ Cup if not more! Put in as much as you want, it won’t taste bad either way.
- Put one slice of butter lettuce on each half of the bread. Place as much of the chickpea mixture as you can onto one side of the sandwich bread. Put the other half of the bread with the lettuce on top.
- Enjoy your vegan chickpea sandwich!
