Ingredients

  • 2 tablespoons avocado oil divided
  • ½ cup yellow onion finely chopped (about ½ medium yellow onion)
  • 2 cloves garlic minced
  • 2 cups fresh spinach roughly chopped chopped
  • cup gluten free bread crumbs *
  • 1 teaspoon chopped fresh rosemary
  • ¾ teaspoon coarse Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 pound ground chicken
  • 1 whole egg

OPTIONAL FIXING’s

  • 4 gluten free hamburger buns or english muffins
  • Lettuce
  • Red onion
  • 4 slices cheese of your choice

Instructions

  • Heat 1 tablespoon avocado oil in a medium skillet over medium high heat. Add the onion, and cook 3-4 minutes, or until slightly translucent and crisp-tender. Add the garlic, and cook 1-2 more minutes, or until garlic is fragrant and lightly browned. Stir in the spinach, and cook, stirring often, until just wilted. Turn off the heat, and stir in the bread crumbs, rosemary, salt, and pepper.
  • Remove the mixture from the heat, and add to a large bowl. Add the ground chicken to the bowl, and stir to combine. Add the egg, and mix well.
  • Divide the mixture into 4 - 6 ounce patties. Heat the remaining oil in a non-stick skillet. Add the patties to the pan, and cook for 6-8 minutes on each side, or until the patties reach 165°F.
  • If needed, work in batches, until all patties are cooked through. Serve on your favorite gluten free bun!
