Fresh Watermelon Gin Mojito

Watermelon juice, muddled lime wedges and fresh mint. Fresh ingredients and gin add a spin to the classic cocktail. This Watermelon Gin Mojito is the perfect refreshing cocktail.

Ingredients

Fresh Watermelon Juice (makes 2 cups juice)

  • 4 Cups Watermelon

Gin Mojito

  • 1.5 OZ Gin
  • 4 OZ Fresh Watermelon Juice* ingredients above
  • 4 OZ Club Soda
  • 2 Lime Wedges
  • 4 Mint Leaves
  • 1 tablespoon Granulated Sugar

Instructions

Fresh Watermelon Juice

  • Add cubed watermelon to blender. Blend until smooth.
  • Strain watermelon juice into a measuring cup or pitcher. Make sure to press on the pulp to get extra watermelon juice. Discard any remaining pulp.
  • Keep to the side. Keep leftover watermelon juice in the fridge.

Gin Mojito

  • Cut the lime into four wedges.
  • Add two lime wedges into a tall glass.
  • Muddle gently to release the lime juice.
  • Add the sugar and mint leaves to the glass.
  • Gently muddle again to release the juices of the limes and mint.
  • Add the fresh watermelon juice.
  • Add ice and half of the club soda and stir.
  • Pour remaining club soda.
  • Best to enjoy with a straw!

Notes

NOTE: Wash limes and mint leaves thoroughly. Mint can sometimes have an unattractively strong taste and is best when washed with soap.
Gin. Substitute for rum, vodka or tequila.
Fresh Watermelon Juice. Use fresh watermelon in this mojito gin recipe. Substitute for store bought watermelon juice, or your favorite fruit juice.
Limes. Muddle fresh lime wedges to create lime juice. Substitute for lemon.
Fresh Mint. Substitute for your favorite herb, like rosemary, basil or thyme.
Sugar. The preference is granulated sugar to have that infamous crunch that a traditional mojito has. Substitute for honey, agave syrup, or simple syrup.
Club Soda. Top off a mojito with a sparkling light mixer like club soda. Substitute for mineral water, flavored sparkling water, soda water, or tonic water.
