Lime Popsicles

Zesty, fresh Lime Popsicles made of only three ingredients! Sparkling water mixed with fresh tart lime flavor and honey! The perfect frozen treat for the Summer that’s only 24 calories.

Equipment

  • Popsicle Molds

Ingredients

  • 1 cup sparkling water
  • ¼ cup lime juice about 2-3 limes
  • 2 tablespoons honey

Instructions

  • Squeeze limes into a glass or bowl with pouring capabilities.
    ¼ cup lime juice
  • Add honey and whisk to combine, until honey dissolves completely.

  • Add sparkling water and stir gently.

  • Pour the fresh lime mixture into the popsicle molds carefully, leaving a gap of a few centimeters from the top.
  • Add the popsicle sticks.
  • Place in the freezer for 4-8 hours, until fully frozen.
  • Once popsicles are completely frozen and ready to eat, remove pops from their molds and enjoy immediately.

Notes

Storage Directions: Leftover popsicles can be removed from their molds and kept in an airtight container in the freezer. The homemade popsicles can be kept there for up to 3 months.
Allow the pops to freeze fully: It typically takes between 4-8 hours for a popsicle to freeze fully. If you remove the pops too soon, they will not be frozen in the center and may leak out.
Unmold in cold water: I’ve found that the best and quickest way to remove popsicles from their molds is to run each popsicle mold under cold water.
Don’t fill all the way: Popsicle liquid will expand slightly while frozen in the popsicle mold. To avoid the liquid from overflowing, leave about ½ an inch from the top and then add the popsicle stick.
