Red White and Blueberry Oatmeal Bake

This strawberry blueberry baked oatmeal is the perfect red white and blue breakfast. An easy breakfast oatmeal bake for the family. This triple berry baked oatmeal is refined sugar free, gluten free and dairy free.

Ingredients

  • 1.5 Cups Berries (½ cup each: raspberries, strawberries, blueberries) (see note below)

Dry Ingredients

  • 2 Cups Old Fashioned Oats Gluten Free
  • 1 teaspoon Baking Powder
  • ¼ Cup Coconut Sugar
  • 1 teaspoon Ground Cinnamon
  • ½ Cup Slivered Almonds (see note below)

Wet Ingredients

  • 2 Cups Oat Milk (or Almond Milk)
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Maple Syrup

Crispy Topping

  • ¼ Cup Old Fashioned Oats Gluten Free
  • 2 tablespoon Coconut Sugar

Instructions

  • Pre-heat the oven to 375ºF.
  • Add dry ingredients in a bowl. In a separate bowl, add all of the wet ingredients. Mix the coconut sugar and oats together for the crispy topping in a small bowl and leave to the side.
  • Mix wet ingredients into the dry ingredients. Stir together (the mixture will seem on the wet side). Add berries and gently stir.
  • Pour mixture into a greased 9x13 baking dish. Sprinkle the crispy topping evenly over the top.
  • Place into the oven and and bake for 40 minutes. This is until the top is browned and crispy and a toothpick goes in and out clean.
  • Scoop onto plates or into bowls. Serve plain, top with whipped cream, or pour some milk over it.

Notes

The mixture will seem runnier than it should be. It will bake and become like a cake with a crispy top!
SLIVERED ALMONDS. Substitute for cashews, pistachios, walnuts or pecans! If you can't find unsalted nuts, use salted and don't add extra salt.
TRIPLE BERRIES. The more berries the merrier! To keep this oatmeal bake red, white and blue make sure to add a red berry along with blueberries. 
GLUTEN FREE OATS. If you’re not gluten free, simply use old fashioned oats.
DAIRY FREE MILK. I prefer oat milk, but any kind of dairy free milk.
