Honey Ginger Gin and Prosecco Cocktail

This Honey Ginger Gin and Prosecco Cocktail is the perfect light, bubbly and flavor-bursting cocktail! Make a homemade honey ginger simple syrup that brings sweetness and a light ginger flavor. Combined with a shot of gin and topped with your favorite prosecco, it’s a great bubbly cocktail!

Ingredients

  • 2 ounces Gin
  • 1 ounce Fresh lemon juice
  • 1 ounce Ginger honey simple syrup
  • 4 ounces Prosecco
  • 1 pear garnish optional

Homemade Honey Ginger Simple Syrup

  • ½ cup Water
  • ½ cup Honey
  • ¼ cup Ginger sliced, peeled

Instructions

Make the Honey Ginger Simple Syrup

  • Peel the ginger root and slice into thin medallions.
  • Simmer honey and water in a pot on the stove on medium-heat.
    ½ cup Honey, ½ cup Water
  • Once the honey dissolves, about 7-10 minutes, remove the pot from the stove.
  • Add the fresh chopped ginger root into the honey simple syrup.
  • Let the ginger root infuse into the honey simple syrup for at least 10 minutes, while the simple syrup cools down. The longer the ginger sits in the simple syrup, the more prominent the ginger flavor. Leave ginger up to the 45 minutes.
    ¼ cup Ginger
  • Store in an airtight container for up to ten days in the fridge.

Make the Ginger Gin Prosecco Cocktail

  • Pour the lemon juice, honey ginger simple syrup and gin into a cocktail shaker or mason jar filled with ice.
    1 ounce Fresh lemon juice, 1 ounce Ginger honey simple syrup, 2 ounces Gin
  • Shaker for 15-seconds, until the cocktail is mixed and the shaker is cold to touch.
  • Strain into a large glass filled with fresh ice.
  • Top with prosecco.
  • Garnish with a thin slice of pear or lemon wedge.

Notes

Gin - I use Hendrick’s gin, but you can use whatever favorite gin you have.
Prosecco - Adding prosecco to top this cocktail makes this drink even better! There’s literally nothing like gin and prosecco together! Substitute for cava or champagne. For a lighter cocktail, substitute for club soda.
Lemon - I love adding fresh lemon juice to bring out the other flavors. Don’t substitute for fresh lime juice.
Homemade Honey Ginger Simple Syrup - Uses honey and water along with fresh ginger to add extra flavor. To substitute for honey, use sugar, maple syrup or agave nectar.
What if I don’t have a cocktail shaker? Use a mason jar! They’re the perfect substitute. I highly suggest shaking any cocktail - it really changes the flavor of the recipe.
Want to make this ginger gin cocktail into a mocktail? It’s still going to be delicious! Either swap the gin for a non-alcoholic gin version, or omit completely. Then, substitute the prosecco for ginger beer or ginger kombucha for an even stronger ginger taste. You can also use ginger ale, but it’s quite sweet.
