Gluten Free Chicken Meatballs

These Gluten Free Chicken Meatballs are easy and delicious. Great for meal prep and making a double batch to freeze. Serve them with your favorite sauce and gluten-free pasta or zucchini noodles, and you have a complete meal!

Ingredients

  • 1 pound ground chicken
  • ½ cup gluten free bread crumbs
  • ½ cup finely grated parmesan cheese
  • 1 large whole egg
  • 1 tablespoon dried parsley
  • 1 ½ teaspoons dried oregano
  • ¾ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¾ teaspoon coarse Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon grapeseed or avocado oil

Instructions

  • Place all ingredients in a large bowl. Using your hand, gently mash together until well combined, about 15 times.
  • Line a medium baking sheet with parchment paper. Use a 2 tablespoon-size scoop to scoop each meatball onto the tray. To fill the scoop, scrape over the mixture, and then scrape any excess mixture off on the edge of the bowl, so it is flat. This will ensure evenly sized meatballs.
  • Once all the meatballs have been scooped, use your hands to roll into smooth balls and replace onto the baking sheet. Heat oil over medium heat, working in batches if necessary.
  • Place meatballs in the skillet, about 2 inches apart, and cook for about 10 minutes, turning every 2-3 minutes, until evenly browned and the meatballs reach an internal temperature of 165°F.
  • Repeat with remaining meatballs.
  • Serve with your favorite gluten free spaghetti and tomato sauce!

Notes

FOR THE OVEN:
Preheat the oven to 375°F. Follow the above recipe, and once the meatballs have been rolled into balls, place on a well oiled cooling rack that has been placed on a small baking sheet. Bake for 8-10 minutes, or until the internal temperature of the meatballs reaches 165°F.
FOR THE AIR FRYER:
Preheat the air fryer to 375°F. Lightly grease the basket of the air fryer with a bit of organic non-stick cooking spray. Place the meatballs in the basket of the air fryer, about 1-2 inches apart. Place basket in the air fryer, and cook for 8 minutes, or until the meatballs reach an internal temperature of 165°F.
IF YOU CANNOT FIND GLUTEN FREE BREAD CRUMBS:
Gluten free bread crumbs are pretty widely available in most grocery stores, but if you cannot find them in yours, simply toast 2 pieces of your favorite gluten free bread, tear into pieces, and place in the food processor. Puree until crumbly.
