In an oiled large pot or dutch oven, cook the ground turkey with spices over medium heat until fully cooked.

Add the roasted tomatoes, beans and beef stock, place a lid on top and cook for 25-30 minutes. Add in the corn & edamame and stir to combine.

Serve plain or on top of your favorite side (brown rice or quinoa are a favorite!). Top with fresh cilantro, parsley, sour cream, limes, cheese, etc.
