– Ground beef  – Neutral oil – Taco seasoning – Salt – Black pepper – Cooked rice – Spinach – Flour tortillas – Green enchilada sauce

Add ground beef to a pan and then add taco seasoning, salt and black pepper. Mix well and continue cooking until beef is cooked through.

Turn heat off and add cooked rice and raw spinach to the pan. Gently stir to combine and cook until spinach is wilted.

Cover the bottom of a baking dish with enchilada sauce. Place a tortilla in the enchilada sauce and add the ground beef mixture to each flour tortilla.

Roll the tortilla over, until the seam is facing down. Push the enchilada toward one side of the baking dish.

Top with enchilada sauce and smooth over with a spoon. Add cheese and any chili peppers and bake for 15-20 minutes at 425 degrees.
