– This authentic chilaquiles recipe is a family recipe passed down from my Mother in Law. – Chilaquiles are a simple meal using only a few ingredients. – Naturally gluten free.
– Roma tomatoes – Jalapeno – Serrano – Salt – Corn tortilla chips – Egg Optional – 4 ounces chorizo – ½ avocado
Broil the tomatoes, jalapeno, and serrano for 15 minutes.
Place broiled veggies in a blender and blend until smooth. If needed, add a small bit of water if until able to blend into a sauce.
Toss the chips onto a heated pan. Lightly press on them with a spoon to break them in half. Once warm, carefully pour the sauce over & stir.
Push salsa-soaked chips to the edges of the pan and add the whisked egg and scramble. Stir tortilla chips back into the center and toss to combine. Serve while warm!
