– Flank steak – Green bell pepper – Corn tortillas – Shredded cheese – Orange juice – Lime juice – Salt – Cilantro, optional
Marinate the flank steak in orange juice, lime juice & salt for 30-60 minutes. While marinating, dice the bell pepper.
Cook the marinated steak on the cast iron skillet without touching for 3 minutes then flip the steak to the other side. Let sear for an additional 3-5 minutes.
Remove the carne asada steak from the skillet and toss the cubed green peppers into the cast iron skillet for 2-3 minutes.
Using a skillet, place a corn tortilla down then top with cheese, cubed carne asada, and charred peppers. Top with more cheese and another tortilla.
When the cheese is semi melted and the quesadilla bottom is crispy and browned (about 3-minutes), flip the quesadilla to the other side and cook for another 3 minutes.
