    Fresh Lime Popsicles

    Zesty, fresh Lime Popsicles made of only three ingredients! Sparkling water mixed with fresh tart lime flavor and honey! The perfect frozen treat for the Summer that’s only 24 calories.

    Tart but sweet with minimal sugar - these are the perfect homemade popsicles to make! This popsicle recipe has significantly less sugar than other fruit popsicles, all due to using sparkling water!

    Why this recipe works

    Popsicles are a favorite frozen treat as they’re typically fruit-forward and super clean ingredients! 

    These lime popsicles are my favorite because they:

    • Use only fresh ingredients.
    • Are a great crowd-serving dish easy to make in advance.
    • Fun for both adults and kids alike!
    • Have much less added sugar than other popsicle recipes.

    Choosing popsicle molds

    I purchased my popsicle molds on Amazon. They’re great because they have a stand! There’s many shapes, sizes and material options online for purchase. 

    Here are some of my favorite options:

    Mine: Stainless steel popsicle molds that are eco-friendly and rust resistant. Comes with a popsicle rack. Makes 6 at a time.https://amzn.to/3gp75sD 
    Silicone: Silicone moulds that are eco-friendly and made of food grade silicone. Makes 10 at a time.https://amzn.to/3gl6Grd

    Ingredient notes

    Fresh Lime Juice

    Fresh limes are absolutely essential for this popsicle and add that tartness. I do not recommend using store-bought lime juice since this recipe has such few ingredients. Substitute for lemons, but the popsicles will be a tad sweeter.

    Sparkling Water

    Sparkling water helps balance out the tartness of the fresh lime juice and adds its own extra flavor. Substitute for sparkling mineral water, club soda, water or even coconut water! You can also use regular water.

    Sweetener

    Without a bit of sweetener, this popsicle is unfortunately waaay too tart. I like to use agave nectar or maple syrup, but you can also use honey or even simple syrup. Just remember that all sugars have a slightly different taste and will result in slightly different tasting popsicles.

    TIP! Lime zest can add extra flavor to your popsicles. If you add lime zest, you will have to strain it out of your mixture before pouring into the popsicle molds

    Instructions

    Step One: Combine the ingredients.

    Squeeze the fresh limes into a bowl with a spout. Stir in the honey, and whisk until the honey is fully dissolved. Next, add in the sparkling water.

    Stir gently to combine completely.

    Step Two: Pour into molds.

    Pour the lime popsicle mixture into each popsicle, carefully. Make sure to leave a few centimeters from the top of the mold, as the mixture will freeze and expand.

    Add popsicle sticks to the filled popsicle molds.

    Step Three: Freeze the pops.

    Add popsicle sticks and place the popsicle molds into the freezer. Let popsicles solidify for at least 4-8 hours until fully frozen. Removing the popsicles before they’re fully frozen will result in immediate melting, which we definitely don’t want!

    Step Four: Remove and enjoy!

    Once fully solid and ready to eat, remove popsicles from the molds. I’ve found that the best and quickest way to remove the pops is to run each popsicle mold individually under cold water until you’re able to pull the popsicle out of the mold.

    Variations

    • Add frozen cherries or fresh cherries into the popsicle mold.
    • Instead of club soda, use coconut cream, coconut milk, or even greek yogurt for creamier coconut lime popsicles.
    • Swap sparkling water for watermelon juice.

    Expert Tips

    Storage Directions: Leftover popsicles can be removed from their molds and kept in an airtight container in the freezer. The homemade popsicles can be kept there for up to 3 months.

    Allow the pops to freeze fully: It typically takes between 4-8 hours for a popsicle to freeze fully. If you remove the pops too soon, they will not be frozen in the center and may leak out.

    Unmold in cold water: I’ve found that the best and quickest way to remove popsicles from their molds is to run each popsicle mold under cold water.

    Don’t fill all the way: Popsicle liquid will expand slightly while frozen in the popsicle mold. To avoid the liquid from overflowing, leave only a few centimeters from the top before adding the popsicle stick.

    FAQ's

    Can you adjust the amount of lime juice and sugar in the popsicles?

    For more tart popsicles, use even less sugar and more lime juice. Otherwise you can add more sugar (simple syrup, maple syrup, or agave syrup) if you want really sweet popsicles.

    Can you use key lime instead of lime?

    You can definitely substitute key lime instead of regular limes. The only difference is that key limes are typically more tart and aromatic. 

    How do I unmold popsicles?

    I’ve found that the best and quickest way to remove popsicles from their molds is to run each popsicle mold under cold water.

    How high up should I fill my popsicle mold?

    Popsicle liquid will expand slightly while frozen in the popsicle mold. To avoid the liquid from overflowing, leave about ½ an inch from the top.

    Equipment

    • Popsicle Molds

    Ingredients
      

    • 1 cup sparkling water
    • ¼ cup lime juice about 2-3 limes
    • 2 tablespoons honey

    Instructions
     

    • Squeeze limes into a glass or bowl with pouring capabilities.
      ¼ cup lime juice
    • Add honey and whisk to combine, until honey dissolves completely.
      2 tablespoons honey
    • Add sparkling water and stir gently.
      1 cup sparkling water
    • Pour the fresh lime mixture into the popsicle molds carefully, leaving a gap of a few centimeters from the top.
    • Add the popsicle sticks.
    • Place in the freezer for 4-8 hours, until fully frozen.
    • Once popsicles are completely frozen and ready to eat, remove pops from their molds and enjoy immediately.
